WINE CONCEPTS: SWEETNESS

Sweetness in wines

Grape juice is naturally sweet. But as during fermentation  yeast feeds on the grapes sugar, the final juice becomes less sweet.

Then occurs the Autolysis: yeast die once the alcohol reaches 15% or when  all the sugars have been used. Then, any sugar remaining in the wine will determine how sweet a wine is. Remember: the ripper grapes, the more sugar they have.
